Mustard Crust for Christmas Ham

1 lightly salted cooked/oven baked gammon joint

3 tbsp sweet mustard
2 egg yolks
4 tbsp natural breadcrumbs
50g/2oz butter

Method:

Preheat the oven to 275°C/525°F. Remove rind from the ham and place the ham in a roasting tin. Mix all the ingredients together, apart from the butter, and spread the crust mixture over the ham so it is completely covered. Add dollops of butter and cook in the oven for 5-10 min. until golden brown.

Tip: Make the mustard mixture a couple of hours before spreading on the ham to allow the mixture to thicken.
